Brûlé, which was started by pastry chef Dru Tevis and Chase Cline, has quickly become known in the area's food scene because of its strong pastry training, local connections, and clear creative point of view.

One thing that makes Brûlé so interesting is that it doesn't work like a regular bakery with just one type of bread. 

Instead, it has made a name for itself in Coastal Delaware through pop-ups, pickups, restaurant partnerships, and special events.

Brûlé is different from other places because it is dedicated to starting over from scratch. 

Chef Dru Tevis makes everything in-house, from dough and frosting to fillings and ice cream, using local and seasonal ingredients whenever possible. 

The brand says its desserts are both comforting and nostalgic but also a little different, and that seems like a very good way to put it.

Meet Pastry Chef Dru Tevis

Behind Brûlé Bakery is Pastry Chef Dru Tevis, whose background brings a serious level of experience and training to the business. 

Dru grew up in Westminster, Maryland, and spent the summers in Rehoboth Beach when he was a kid. 

His journey to becoming a pastry chef wasn't a straight line, which makes his story even more interesting.

After graduating from New York University with a degree in media, culture, and communication studies, Dru planned to attend graduate film school. 

But after working in a restaurant in downtown Rehoboth and offering to create desserts for restaurant week, he realized pastry was what he truly wanted to pursue. 

That decision led him to the French Culinary Institute in Manhattan, where he earned a Grand Diplôme in Professional Pastry Arts and graduated as class valedictorian.

From there, he trained and worked under respected pastry chefs, including Kierin Baldwin of The Dutch and Christina Tosi of Milk Bar. 

He later learned more about pastries and chocolate in places like Chicago, Las Vegas, Paris, London, Tuscany, and Vermont. 

It's clear that his ongoing desire to learn has become a big part of who he is as a chef.

Dru built a great career working with restaurants all over the Rehoboth area

He worked with La Vida Hospitality Group, served as corporate pastry chef for SoDel Concepts, and currently works as pastry chef for Southern Delaware Brewing Company, which includes Thompson Island Brewing Company and Ocean View Brewing Company. 

He also consults at One Coastal in Fenwick Island.

In 2022, Dru was crowned the winner of Food Network’s Holiday Baking Championship Season 9, which brought national attention to his work

Still, one of the best things about his story is that it still feels like it comes from real passion, community, and craft. 

He talks a lot about how happy it makes him to see someone really respond to something he made, and that feeling of happiness seems to be at the heart of everything he does.

The Story Behind Brûlé Bakery

In September 2025, Brûlé Bakery opened inside Baked by The Dewey Post in Dewey Beach. 

Dru and Chase came up with a smart way to start the business without having to rent a whole space from the start. 

Brûlé was able to focus on building its pastry business through retail, wholesale, and pre-orders while growing at a pace that made sense because Baked already ran the coffee shop side.

Delaware Today says that the opening came after years of planning, experience, and timing. 

After Dru’s Food Network win and additional pastry training, the couple took their time before officially launching the bakery. 

That patience seems to have paid off, because Brûlé quickly gained a lot of fans in the area and a growing list of places where people could buy its desserts.

The name Brûlé is also a good fit for the business. It pays homage to Dru's French pastry background and gives the brand room to grow, since it doesn't have to be known for just one type of dessert. 

The name can include cakes, cookies, pastries, plated desserts, and specialty sweets, which gives the brand room to grow.

Brûlé is also a partnership, which is just as important. Dru takes care of the pastries, and Chase takes care of everything else that needs to be done to run the business. 

That split of duties has led to a setup that feels both creative and useful, which is often what a small business needs to grow.

Where to Find Brûlé Bakery in Coastal Delaware

You can find Brûlé Bakery within Baked by The Dewey Post in Dewey Beach, where customers can pick up cakes, cookies, and other sweets. 

The bakery is located at 2000 Coastal Highway in Dewey Beach, giving it a central and familiar home base near the beach.

What You Can Pre-Order From Brûlé Bakery

Brûlé Bakery lets customers pre-order cakes and cookies with different flavors every month

Orders require at least 72 hours’ notice, and pickups are available on Fridays, Saturdays, and Sundays at The Dewey Post in Dewey Beach.

The April cake lineup includes several flavors that immediately stand out. 

The Hummingbird Cake combines pineapple banana pecan cake with caramelized white chocolate ganache, pineapple passion fruit curd, Nilla crumb, and vanilla cream cheese buttercream. 

The Almond Joy Layer Cake features chocolate and coconut cake with coconut cream, chocolate ganache, Nutella crunch, coconut almond caramel, cream cheese buttercream, chocolate shell, and candied Marcona almonds.

Other April offerings include Black & White Cake, Red Velvet Cake, and Confetti Cake, with some flavors available in limited quantities. 

In addition to cakes, Brûlé also offers cookie boxes and cookie, bar, and sweet treat platters. 

That means the bakery is a great place to go for birthdays, parties, and other events, as well as for gifts and weekends when you just want to bring home some kind of nice surprise.

Brûlé Bakery is also known for how involved it is in events in the area.

Brûlé Bakery Was Featured in Back of House

Brûlé Bakery was also included in Back of House, a 10-part mini-documentary series that premiered on February 3, 2026, and focused on Delaware’s chefs and food culture. 

The project was a collaboration between the Delaware Tourism Office, the Delaware Restaurant Association, and 1440 Film Co.

On social media, the bakery shared that it felt honored to be included alongside other chefs and restaurants representing Delaware. 

Dru also spoke about how meaningful the experience was, describing the series as a celebration of the chefs and restaurants that have shaped the state’s food scene. 

In his post, he explained that his segment reflected the time he spent working for SoDel Concepts, especially at Thompson Island Brewing, and how that role eventually helped prepare and inspire him to launch Brûlé with Chase.
